Effect of Shelling on the Quality and Flavor of Sunflower Oil

Shelling oil seeds is an important process in the pretreatment of oil production.
Sunflower seeds contain 20% to 30% hulls, which are rich in natural pigments such as anthocyanin and melanin. The wax content in the hulls accounts for about 60% of the total lipids in the hulls.
Pressing oil with hulls will cause these components to enter the crude oil, adversely affecting the oil refining process and final product quality. In addition, the high crude fiber content (about 20%) in the oil cake will reduce the utilization value of sunflower seeds.

Studies have shown that sunflower seed hulls negatively affect the sensory and product quality of cold-pressed sunflower oil.Sunflower oil produced with hulls has an obvious burnt taste, weak clarity and pure oil flavor, while oil made from shelled sunflower seeds achieves a much higher overall flavor score. Shelling therefore plays a positive role in improving the overall flavor of sunflower oil.
Therefore, efficient and thorough shelling is a critical step to ensure high-quality sunflower oil production. To achieve this, our complete production line is equipped with professional shelling equipment specially designed for oil seeds, which can effectively remove sunflower seed hulls and lay a solid foundation for high-quality oil pressing and refining.
